This cheesy potato recipe has been a beloved tradition in my family, made by my grandmother every Christmas alongside brisket. It's my absolute favorite potato dish! I prefer to leave the skins on the potatoes for extra texture, but you can peel them if you like. Garnish with green onions or Italian parsley and top with extra cheese for a restaurant-quality presentation.

    1. Preheat the oven: Set your oven to 350°F (175°C) and grease a deep 9x13-inch baking dish with cooking spray.

    2. Boil the potatoes: Add the yellow and red potatoes to a large pot, cover with salted water, and bring to a boil. Cook for about 10 minutes, or until soft. Drain.

    3. Prepare the cheese mixture: In a large bowl, combine mozzarella, Cheddar, sour cream, and mayonnaise. Mix well. Gently fold the potatoes into the mixture, using a wooden spoon or spatula to avoid mashing them.

    4. Assemble the dish: Pour the cheesy potato mixture into the greased baking dish. Dot the top with pieces of butter and cover with aluminum foil.

    5. Bake: Place in the preheated oven and bake for 25 to 30 minutes until thoroughly cooked.
      After baking, remove the foil, turn on the oven's broiler, and broil the dish for about 5 minutes, or until the top is golden and bubbly.
