What is Tanghulu?
For those unfamiliar, tang-hulu consists of fruit skewers coated in a hardened, clear sugar syrup. Traditionally made with sour hawthorn berries, tang-hulu can now be crafted using almost any fruit, including strawberries and even cherry tomatoes. Although this snack is typically sold from street carts during winter in northern China—since the sugar coating melts in the summer heat—it has expanded its reach to cities across China, Japan, Korea, and even the U.S.

Thread 3 strawberries onto a skewer. In a saucepan, bring 2 cups of sugar, 1/3 cup of corn syrup,and 1/4 cup of water to a boil without stirring, cooking until the mixture reaches 300°F (hard-crack stage) on a candy thermometer.
Carefully tilt the pan and dip the strawberries into the syrup, turning them to ensure they are fully coated.
Allow any excess syrup to drip off, then place the skewers on parchment paper to harden. For a fun twist, serve with whipped cream for a strawberries-and-cream treat.
