Delicious Roasted Branzino with Mediterranean Herbs and Citrus

Branzino, often referred to as Greek or European sea bass, is a tender, mild-flavored white fish that pairs beautifully with Mediterranean ingredients. I love roasting it whole, filled with lemon, fresh oregano, and rosemary, for a flavorful and satisfying dish.

Instructions
- Preheat the oven to 325°F (165°C).
- Drizzle 1 tablespoon of olive oil into a large baking dish and add the chopped red onion. Season with salt and pepper.
- Place the cleaned fish in the baking dish. Stuff each cavity with a lemon wedge, rosemary sprig, and some of the red onion from the pan.
- Pour the white wine and lemon juice over the fish and sprinkle with oregano. Pour the last tablespoon of olive oil over the top.
- Bake for about 25 minutes, or until the fish is opaque and flakes easily with a fork.
- Using a spatula, gently separate the fish from the bones. Serve on a platter, garnished with parsley and lemon wedges.
