Prepare the Caramel:
- In a saucepan over medium heat, combine the sugar and water. Stir until the sugar dissolves, then let it cook without stirring until the mixture turns a golden amber color.
- Carefully pour the caramel into a 9-inch flan mold or round baking dish, tilting the dish to evenly coat the bottom with the caramel. Set aside to cool.
Prepare the Custard:
- In a mixing bowl, beat the eggs lightly. Add the sweetened condensed milk, whole milk, vanilla extract, salt, and dark rum (if using). Whisk until well combined and smooth.
- Carefully layer the custard mixture on top of the cooled caramel in the mold.
Bake the Quesillo:
- Preheat the oven to 350°F (175°C).
- Place the flan mold inside a larger baking pan and fill the pan with hot water until it reaches halfway up the sides of the mold, creating a water bath.
- Carefully place the setup in the oven and bake for 45 minutes or until a toothpick inserted into the center comes out clean.
Cool and Unmold:
- Take the mold out of the water bath and let it cool down to room temperature. Once cooled, refrigerate for at least 3 hours or overnight for the best texture.
