3pounds pork belly, skin removed, cut into 1.5-inch cubes
1/4cup olive oil (or any neutral oil)
1/4cup BBQ dry rub
1/2cup BBQ sauce
1/4cup honey
2tbsp brown sugar
2tbsp butter, cubed
Instructions
Preheat the Smoker: Preheat your smoker to 250°F (120°C) with hickory, oak, or fruitwood for best flavor.
Season the Pork Belly: Toss the pork belly cubes in olive oil, coating evenly. Generously sprinkle BBQ dry rub over the cubes until all sides are coated.
Smoke the Pork Belly: Arrange the pork belly cubes on the smoker grate, making sure they don’t touch each other. Smoke for 2 to 2.5 hours or until they have a nice smoky color and an internal temperature of about 190°F.
Prepare the Sauce: In a large aluminum pan, mix BBQ sauce, honey, brown sugar, and butter until smooth.
Combine & Smoke Again: Transfer the smoked pork belly cubes to the aluminum pan with the sauce. Toss to coat evenly, then cover the pan with foil.
Cook Until Tender: Return the pan to the smoker for another 1 to 1.5 hours, or until the pork belly reaches an internal temperature of 203°F and is tender and sticky.
Finish & Serve: Remove the pan from the smoker and let the burnt ends rest for 10 minutes. Serve hot as an appetizer or add them to sandwiches, tacos, or sliders.
