Sopes

These Mexican sope,s are a crowd-pleaser at any gathering. Serve this delicious appetizer with an array of toppings like beans, cheese, and meat.

Ingredients
  • 3 cups masa harina
  • 1 tablespoon salt
  • 2 cups warm water (or as needed)
  • 1/4 quart oil (for frying)
Instructions
  1. Sopes
    1. In a bowl, whisk together the masa harina and salt. Gradually stir in enough warm water until the dough is smooth and holds together.
    2. Divide the dough into twelve 2-inch balls. Place the balls on parchment paper and flatten them into circles about ½ inch thick.
    3. Heat oil in a deep fryer or large saucepan to 400°F (200°C).
    4. Working in batches, fry a few sopes at a time until they are lightly browned, approximately 30 seconds on each side. Use tongs to transfer them to a paper towel-lined plate and let them cool for 2 to 3 minutes until they can be handled. Pinch the edges of each sope to form a little boat.
    5. Return the sopes to the hot oil and fry until golden and cooked through, an additional 1 to 2 minutes. Drain on paper towels.
