In a large saucepan, combine the milk, sugar, and cinnamon sticks. Bring to a boil over low heat. Allow it to boil, stirring constantly, until the milk reduces by a little over one-third, which takes about 20 minutes. Take it off the heat and let it cool for approximately 10 minutes.
In a separate bowl, beat the egg yolks with an electric mixer until they become thick and pale. Gradually mix in a small amount of the warm milk mixture. Next, return the egg yolk mixture to the saucepan with the remaining milk mixture. Stir to combine and heat over low until it reaches a boil.Continuously stir and scrape the bottom and sides until the mixture thickens enough to coat the back of a spoon, approximately 5 to 7 minutes.
