2 egg yolks

Instructions
Preheat Oven: Set the oven to 325°F (160°C).
Blend Ingredients: In a mixing bowl, combine heavy cream, sour cream, egg yolks, salt, pepper, paprika, and lemon zest. Whisk until smooth.
Add Crab: Gently fold in the crab meat, being careful not to break up the pieces too much.
Pour into Ramekins: Divide the mixture into 4 small ramekins.
Bake: Place the ramekins in a baking dish and pour hot water into the dish until it reaches halfway up the sides of the ramekins. Bake for 20-25 minutes, watching for the custard to firm up while keeping a gentle wobble at the center.
Cool: Take it out of the oven and allow it to cool down a bit. Refrigerate for at least 1 hour.
Add Sugar Topping: Sprinkle a thin, even layer of sugar on top of each custard.
Brûlée: Use a kitchen torch to melt and caramelize the sugar until golden and crispy. If you don't have a torch, you can broil it in the oven for 1-2 minutes, watching closely.
