burrata cheese:Burrata with Minted Peas, Fava Beans yummy
Description
Burrata with Minted Peas, Fava Beans(burrata cheese)
This recipe is highly adaptable, perfect for feeding a crowd or just a few people. You can easily adjust the quantities to suit the occasion. I went all out with the cheese, using three balls of burrata for twelve guests, but it disappeared quicker than expected! So, it’s wise to gauge the appetite of your group before deciding how much burrata to prepare.
Each component in this dish shines on its own — from the crispy olive oil toasts to the fresh peas and fava beans with mint and lemon. When combined, they make an incredible appetizer for a small group or a delicious meal for two.
Ingredients
Instructions
Heat a medium pot of salted water until it reaches a boil.
Blanch the peas for 1 to 2 minutes until tender, then transfer them to an ice water bath with a slotted spoon. This will stop the cooking process. Drain and pat the peas dry.
- Using the same pot, return the water to a boil and cook the fava beans for 1 minute. Transfer them to the ice water bath, drain, and peel the waxy outer layer to reveal the tender beans.
- In a medium bowl, mix the peas, fava beans, lemon zest, lemon juice, and olive oil. Season with salt and pepper, and set the mixture aside.
- Preheat the broiler. Brush both sides of the bread slices with olive oil and season with salt. Place them on a baking sheet and broil for about 2 minutes per side, flipping once, until lightly toasted.
