This baked barramundi is paired with a rich lemon-basil butter sauce, perfect for serving over brown rice. Barramundi has become a frequent find at my local grocery store, but you could also try this recipe with tilapia for a delicious alternative.

Ingredients
  • 4 oz barramundi fillets (Asian sea bass)
  • 1 tbsp olive oil (or as needed)
  • Crumb Topping:
  • 1 cup dried bread crumbs
  • ½ tsp seafood seasoning (e.g., Old Bay)
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp lemon zest
  • 1 pinch dried thyme
  • Lemon-Basil Butter Sauce:
  • 1 cup melted butter
  • ¼ cup lemon juice
  • ¼ cup white wine
  • 2 tbsp fresh basil, chopped (or to taste)
Instructions
    1. Preheat the oven to 375°F (190°C).
    2. Lightly brush the barramundi fillets with olive oil.
    3. Mix the bread crumbs, seafood seasoning, garlic powder, onion powder, lemon zest, and thyme on a plate for the crumb topping. Mix until well blended.
    4. Press each fillet into the crumb mixture to coat thoroughly, then place them on a baking sheet.
    5. Place the fish in the preheated oven and bake for 10 minutes.. Flip the fillets and continue baking for another 10 minutes, or until the fish flakes easily with a fork.
    6. To make the sauce, stir together the melted butter, lemon juice, white wine, and basil in a small bowl until well mixed.
    7. Drizzle the lemon-basil butter sauce over the baked fish before serving.
